I have to go to work but all I want to do is go to the gym right now.

I have been working 7-8 hour days mon-fri which is weird for me. I like it but it can also be sort of draining. I make sure to get my workout in after work though and haven’t missed one in over 2 weeks so far. So yay for consistency.

I am really enjoying my job right now. I is so chill and it is not hard work really. I am looking for ebooks to listen to while doing my work. It makes it go so much faster.

The only thing I don’t like is this one guy I work with. He is a couple years younger than me. He does not come off as very intelligent. The other day at lunch he said some things that were very inappropriate and offensive. So I’m really not a fan of him but luckily I don’t really need to interact much with him if I don’t want to.

Also, I start back working at the sushi restaurant next week. I won’t work too many hours but it will be nice to have some extra spending cash as well as discounted sushi.

So that is what’s goin on in my life now.

First day of my training program. Had some good food and a good workout today. Prepped lots of food but now I have a lot for leftovers later in the week so yay. Good stuff.

Honestly I had a pretty shitty birthday yesterday. Basically everything I had planned to do didn’t happen for some reason or another. I did get some sushi though so I guess that was good.

I don’t know why I was so down about it but I guess I just expected too much? I just feel kind of shitty.

Well anyway I got myself the best present and bought an 8-week membership to an online training and nutrition program that will keep me accountable. One of the things I struggle with is falling off the bandwagon at times and I think this will give me the support to keep with it. And if I like it after 8 weeks I can continue with the program. Now time to set some goals.

I’m feeling sore from a squat/deadlift session yesterday. Feels good.

Almond Butter Fudge | Livin’ the Crunchy Life
Ingredients:
1/2 cup raw almond butter (or any nut/seed butter)
1/4 cup coconut oil* (coconut butter will work)
1 - 2 tbsp honey (optional to taste)
pinch salt or to taste (leave out if almond butter is salted)
1 tsp cinnamon (optional)
1/2 tsp vanilla extract
2 tbsp coconut milk (optional for creamier texture)
Directions:
Add all ingredients to food processor. Process until well blended.
Scoop mixture into a parchment paper lined dish or into silicon molds. I used random plastic containers and mini loaf pans. The size of the dish will affect the thickness of the fudge so use a smaller pan/container if you want thick chunks and larger pan for thin fudge.
Top with sliced almonds, chocolate chips, shredded coconut, or whatever else you’d like.
Freeze for 30-60 minutes (or until firm).
Remove from freezer and pull parchment paper with fudge from container (or just pop from molds and you’re done). Cut fudge into squares of whatever size you’d like.
Return to freezer until ready to eat.
***Will melt if left too long at room temperature due to the coconut oil. Keep in refrigerator or freezer!***

One last note:

It will also be great to be working a job that doesn’t deal with food!!

I mean I love food, don’t get me wrong, but the crap that passes as food in larger scale food production just sucks. I hate being around it and serving it to people.

I will now be having a bomb ass workout session because all of the adrenaline coursing through my veins. I get really excited over stuff like this.

Aaand now I can call the assisted living place back and tell them I just got offered another job. I feel a little bad but not really. I need to diversify. This research experience will be really great because I have already worked so many different types of jobs and this is just one more to add to my skill set.

It is kind of crazy how things worked out. I mean if I didn’t get that crappy internship and then leave it, I probably wouldn’t have even been looking for work at this point in the summer. Silver lining??

Also, I’m pretty sure I’m still going to waitress at the sushi restaurant on the weekends as well because discounted sashimi obviously.

Life is pretty good right now.

I am just a simple midwest-living girl going to school for Dietetics with a minor in Kinesiology. I am 21 years old. I currently follow a ketogenic diet because it makes my hectic life easier. I try to eat real foods such as full-fat, grass-fed, minimally processed stuff but I also enjoy occasional treats. I love to lift, crochet, read, bike ride, swim and many other things!
